Rainbo Energy Balls

Ingredients

  • 1/2 cup raw walnuts
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup coconut shreds
  • 1 cup dates
  • 1/8 tsp sea salt
  • pinch of cinnamon
  • 2 tsp Maca powder
  • 2 tbsp chia seeds
  • 4 full droppers 11:11 tincture (or more!)

Superfood Toppings

  • Beet powder
  • Turmeric
  • Bee pollen
  • Maca
  • Chaga and Reishi powder
  • Matcha
  • Spirulina
  • Blue Majik

Directions

  1. Start by soaking your dates in warm water. If they are already juicy dates then you can skip this step
  2. While dates are soaking for 15-20 minutes, place walnuts and pumpkin seeds into your food processor and grind until they form a meal
  3. Place meal into mixing bowl
  4. Add dates to food processor and grind until they are a paste. With a spatula, remove dates from food processor and add to mixing bowl with nuts and seeds
  5. Place all other ingredients into the mixing bowl and blend everything together, I like to use my hands
  6. Form 6-8 balls, depending on how big you make them
  7. Roll energy balls in superfood mixtures to create vibrant, nutrient rich balls
  8. Store in fridge or freezer
  9. Enjoy! These are great as snacks on the go, when you're craving sweets, before a work out, or as dessert!
